A Festival Dedicated to Honey in its Month!

September, a whole month to celebrate the most awesome natural sweetener in the world: honey! And there are many interesting facts about this product and the precious honey bees who help in the pollination of over 75% of the food we consume globally!

 Here 8 super interesting things  you’ll love to know:

  1. Honey is the only non-perishable food in the world. There are archaeological findings of pots of honey, thousands of years old, and yet still preserved!
  2. Honey has many benefits for our health: it is a good source of antioxidants, antibacterial and antifungal properties, helps heal wounds, contains phytonutrients, helps to prevent and treat digestive issues, and soothes a sore throat.
  3. Honey is produced by bees as food stores for the hive during winter. Luckily for us, these awesome little workers produce 2-3 times more honey than they need.
  4. If the queen bee dies, workers will nurse a new queen by selecting a young larva and feeding it with “royal jelly“, enabling the larva to develop into a fertile queen.
  5. Honey bees fly at a speed of around 15.5 miles per hour and beat their wings 200 times per second.
  6. Bees have 170 odorant receptors, used to communicate within the hive and to recognise different flowers in search for food.
  7. When the worker returns to the hive, it moves in a figure-of-eight and waggles its body to indicate the direction of the food source.
  8. There are nearly 20,000 different species of bees in the world, —2,000 of which inhabit Mexico, and 46 of them do not have a sting.

As you may know, bees are an endangered species, but the good news is that you can help preserve these beautiful, amazing insects:

  • Plant flowers rich in nectar, such as lavanda, facellia, marigold vetch, sainfoin, red clover, alexandrine clover, Persian clover, alfalfa, coriander, cumin, parsnip, dill, borage, rosemary, zulla, sunflower, mallow, marigold, buckwheat, fennel, and yellow sweet clover.
  • Don’t be afraid of them and report any hive or comb near your home to local authorities who will make sure to relocate them to a safer place.
  • Buy local honey to support apiaries.
  • Support an association dedicated to the preservation of bees.

 Enough reasons to celebrate this precious gift from nature, right?

 If you can’t make it to beautiful Cabo during September, worry not, as you can replicate these recipes from home and add some honey to your bowl!

Land’s End is home to spectacular amounts of colorful fish like jacks, butterflyfish, and rays. The playful California Sea Lions are always curious about divers visiting their territory and will give you a warm welcome. 

 

Honey  Festival

2 oz Vodka Ciroc

1/2 oz Pure Honey

50 gr Blueberries

1 oz Spiced syrup

1 oz Rosemary infusion

 In a shaker, add blueberries and rosemary infusion, shake until macerated. Then, add the Vodka Ciroc, spiced syrup, and honey for sweetness. Shake with smooth movements and strain twice for a clean drink.  For decoration, add a honey drop on top of the berry purée to enhance the flavor and texture, and garnish with a sprig of fresh herb (thyme or rosemary).

Honey Symphonic (cold and hot)

2 oz Maker’s Mark

1/2 oz Pure honey

1 oz Cinnamon and anise syrup

1/2 oz Lemon and orange syrup

 In a shaker, add the infusions and syrups, from lowest to highest level of intensity of flavors.  Then, add Maker’s Mark to add structure to the drink. Slowly add honey, to prevent foam to form since the drink may be served either hot or cold.  For the hot option, take the mixture to a higher temperature with a steam wand to intensify the flavor. For the cold version, shake the mixture smoothly with ice.  Garnish with a cinnamon stick and nuts.

Passion Margarita

2oz Don Julio Blanco

1 oz Passion fruit purée

1 oz Mango-lemon syrup

1/2 oz Controy

1/2 oz Pure honey

4 Coffee beans

 Using the same procedure when preparing a Margarita, add the purée and honey, then the passion fruit purée for acidity and then the mango-lemon syrup for flavor. Add Don Julio Blanco, and Triple Sec or Controy to highlight citrus flavors.  Stir moderately and serve without straining. Garnish with dried fruit and coffee beans.
